Pisco Sours at Baru Latino

I’ve lived in this city long enough that I have a recommendation for almost anyone, but the cuisine that always comes up short is South American. Yes, there is Doña Cata for authentic Mexican, and I have started to hear some murmurs about a couple of other places (El Inca Latin Deli and Panaderia Latina Bakery), but when I want South American fare, I go to Baru. Their arepas are outstanding and the ceviche is incredible but the thing that says Latin fiesta to me more than anything on the menu is the Pisco Sour.
Similar to the more familiar whisky sour, it’s made with pisco (a grape-based alcohol) and mixed up with egg-white, squeeze of lime, simple syrup and bitters. It sounds like it shouldn’t be as refreshing as it is, but we drank several on a hot evening and felt very soothed.
My Peruvian dinner date was pleased with the authenicity of the pisco sours at Baru, but they also make a mean mojito and several different types of margaritas.
