Saturday was the long-awaited Pig Day for the Foodists collective. It all began a few weeks back when six contributors of the knife-loving sex had gotten themselves a pig from Sloping Hill Farm. The pig, dubbed Wanda with zero inspiration from what I thought to be its its eponym, was carved up and turned into chops, ribs, belly, salume, cina cotta, coppa, chickpea & pork stew, prosciutto, and much, much more.
She gave the “Butchers of Gastown” endless joy in the kitchen that day and will continue to delight the Foodists communal stomach for a good long while, methinks.
