Jose: Erik&#039;s talk was thought-provoking. I had no idea there was such a notion as &#039;Cascadian cuisine&#039; until he started referencing it. For me, the idea of &#039;West Coast&#039; food is more relatable. The quote you mentioned is also a favourite.
